Fresh Cod with vegetables
½ small white Onion chopped fine
1 tablespoon butter
1 small piece of boneless cod, diced
A handful of rice grains
A handful of cabbage
1 small carrot, cubed
½ cup of vegetable stock
1. In a pan stir-fry the onion in oil. Add the fillet and cook further for about 4 minutes.
2. Add the rest of the ingredients and leave to simmer for 20 minutes till both rice and vegetables are soft. Mash up to desired consistency. Add more stock if you need to.
