Fish with Red Pepper in Orange juice
½ a carrot peeled and diced
1 baby potato skinned and cubed
½ red pepper chopped finely
1 small fillet of plaice
Fresh orange juice
Grated cheddar cheese, a little butter
Chopped parsley as seasoning
1. Steam or boil the vegetables till soft and tender.
2. In the meantime place fish in a gratin dish and pour over the orange juice. Top the fish with grated cheese and butter. Cover with foil paper and oven bake for about 20 minutes in a preheated oven.
3. Remove fish from the oven, flake it and remove bones, if any. Add the vegetables and its juices and blend to a puree, coarse or smooth depending on the preferred consistency.
