Cod Fillet with Vegetables Trio


1 baby potato peeled and chopped

1 small carrot grated

1 slice cod fillet skinned

A dash pepper, bay leaf

Butter

1 small tomato skinned and chopped.

1. Place vegetables in a pan of water cover and bring to boil. Reduce heat and simmer for 15 minutes or till vegetables are tender

2. In another pan place fillet with pepper, bay leaf and pour some milk over. Poach fish for about 5 minutes or until it flakes easily. Discard the leaf.

3. Melt the butter in a pan, sauté the tomato until mushy. Stir in flaked fish (check for bones beforehand).

4. Add in the cooked vegetables and mash all together with a mouli into a puree of desired consistency. Add some liquid if necessary.

This fish dish is a good one to introduce to your baby because of the fairly mild taste.
